look, no stitches!

But it’s far from over.  I was stiff and sore today, I suppose because I braced my back and hips too much against the pull of the removal process.(The skin is very thin over the shin bone.)

I ached  enough that I finally took a pill so I could write, I mean so I could sit up at the desktop and write. I wrote another scene.  The good news is I know these people  (my characters) so well that I love to sit and listen to what they have to say. 

So, dinner: I don’t often discuss food but I’d like to tell you a simple, fast, low-cal, low-cost, good-tasting meal. It’s a vegetarian “pizza”.

Start with the base, not pizza dough. Use a tortilla of whatever diameter suits you or that you have in stock. Or use a Naan, or a wide but thin slice of focaccia bread. Spread a few tablespoons of tomato salsa over the surface, your choice as to its heat (mild, medium or hot).  Now the fun: lots and lots of veggies.  Chop up a bunch of vegetables and steam them briefly in the microwave just to give them a head start. You can use a selection of eggplant, red and/or green peppers, red onion, mushrooms, asparagus, green beans, celery, (garlic? - )whatever you have in your crisper that you want to use up.  When tender-crisp, the veggies go on top of the salsa. I don’t season at this point but if you want to sprinkle on some Italian herbs, you can if you want.  Now generously sprinkle grated cheese over the vegetables – Mozzarella or Parmesan or an Italian mix.  Bake for 5 minutes in a 400-degree oven. 

That’s what I had for dinner tonight.  Num.
