what's for dinner?

Roast chicken in an iron skillet. I usually dismantle the entire chicken right away, but I waited until the next day. Matt had a white breast chicken sandwich for lunch and I took it apart then, started a chicken bone broth that stayed on the stove for 8-10 hours. I turned it off last night and strained it this morning, have to make soup now . I made a chicken stir fry for dinner with rice, onions, red pepper, peas and carrots (frozen), and Szechuan sauce—a bowl dinner. good thing, too, because I just ran out of dishwasher detergent. (I’m using more dishes as I feed two of us.) There’s enough chicken left to make chicken salad today, with celery, onions and mayonnaise, for a romaine wrap.

Tonight we will have sliders (from Matt’s kitchen; he has recently been doing his own shopping), baked potatoes and salad. We’ve been using the raspberries, strawberries and blueberries we both had to use up Tonight I will cut up a pineapple.
