A week of cooking followed by a weekend of eating—
See, it began last week when I got mixed up about the date of Thanksgiving. (it happens.) I thought it was last Monday. So I ordered two Cornish game hens. They were not delivered. So I ordered a duck. A very large duck was delivered. But I was still chronologically impaired and I put it in the fridge to let it thaw for last Monday. OOPs. By the time I got in sync it was too late to stick it in the freezer, so i cooked it. It was very large.
I have been coping all week with leftover duck. I made duck hash and duck-stir-fried ( brown) rice. I made cracklings with the skin and ate the ones i didn’t burn.I made duck bone broth. I produced a good half cup of soiid duck fat which is going to be wonderful with roasted potatoes.) Finally I made cassoulet with Italian sausage, canellini and buttered bread crumbs, (and green onions, garlic and a dash of tomato juice).
I gave some away to a friend with whom I used to share a passion for cassoulet.
I don’t like duck any more.
I’m having a rolled stuffed turkey breast (delivered) on Monday.
